Chicken sandwich and fried chicken

Wow! the weather today is quite favorable to me. It is sunny , it was five days cloudy and always raining. My laundry are not fully dried up. But now is good enough .. very hot. This morning before i blog i made everything ready for lunch and snacks. I keep it ready so there is no more reason to tell me that i forgot to prepare food if i start to blog. They use to tell me i am already blog addict.
I prepared chicken sandwich with pandesal for breakfast and fried chicken for lunch. My son said " mommy if you prepare chicken again for dinner I might can fly already in the night. Please don't tell me that you will cook chicken again tonight "
I felt guilty but we just both laugh. My daughter has no complaints because she's going to Enchanted Kingdom with her highschool friends. Hope and pray that they may have a safe outing.

Chicken sandwich:
Put in a pan chicken breast , chopped garlic, chopped onion, salt to taste and pepper. Add water and boil until tender. Remove the chicken from pan and let it cool. Tear into small pieces. Put in a bowl the chicken, finely chopped onion, mayonaise and pepper then mixed thoroughly. Ready now for sandwich. I used pandesal in the morning and loaf bread for snacks .

Fried Chicken

I'll do again my fried chicken recipe. It is the simpliest but it is the favorite of my kids and this is good for me because i'll do it while i am blogging. First i'll just mix together the chicken, a little salt to taste, calamansi juice and pepper. I'll marinate while my kids are still sleeping and i"ll deep fry when they woke up from their bed.
I have still chicken stock in my refrigerator so I'll do chicken gravy. How? This is it....
>About one-to two cups of chicken stock , bring to boil and add 1/4 of a chicken cube. Any brand of chicken cube. I used Chicken Knorr cube.
>Boil it to 3-5 minutes . Taste and put salt if necessary.
>1 spoon of cornstarch and dissolve with little water then mix with the boiling chicken stock. >Lower down the heat and mix the cornstarch. Stir continously until done like a saucy gravy.
