PICKLED CUCUMBER ( Acharang Pipino)

I think cucumber is in season this time , usually it was 12-15 pesos per piece but this morning i bought 3 pieces medium size for 25 pesos. I like preparing pickled cucumber and this is how:
  • Wash and dry around ten unpeeled cucumbers and slice them thinly
  • combine with onion and salt in a pot and stay overnight
  • rinse and drain
  • mix with pickling ingredients in a pot and simmer until sugar dissolved. let it cool
Pickling solution:
  • one seeded rep bell pepper
  • 1/2 cup salt
  • 1- 1/2 cups sugar
  • 1- 1/2 cups vinegar
  • 3 gloves garlic
  • 1 tsp. ginger, cut into strips

Wow! Katatapos ko lang kumain ng pipino, isinabay ko sa grilled lamb chops. Cucumber salad nga lang with onion.

The other day may natira akong pipino, kamatis at onion in salt at vinegar, inilagay ko sa fridge, after two days kinain ko OK pa naman. Naisip ko talagang parang masarap kasi lasang pickles na, may mas magandang style pa pala ng Acharang Pipino.

Ma-try nga ito...
