Sweetened Camias (Averrhoa bilimbi)

There are 2 varieties of Averrhoa Bilimbi here in the Philippines.
1.The sweet one is called Balimbing and also called star fruits. It is color green and turns to light yellow when ripen. It is slightly acidic but sweet and tasty. It looks like a star but elongated oval shaped fruit. When cut across it shows a 5-pointed (sometimes 6-pointed or 7-pointed) star shape. The fruits are a good source of Vitamin C.
2. Camias is sour variety and so acidic. Filipinos use as for flavoring for Filipino dish sinigang. Fruit is use for making pickles and commonly eaten raw dip with salt and spice.
Other individuals preserved the excess camias fruits.

This is how to make Preserved Camias.
i gallon camias fruits
2 tablespoon lime (apog)
Water- enough to cover the entire camias in a pan.
Cut both ends to removed the crown
Pricked several times each fruit with toothpicks
Soak with water with lime and Blanch.
Squeeze camias one by one. ( do not crush the fruits)
Measure the water enough to cover the camias and add sugar the same as of water.
Cook camias in this syrup. Let boil for ten minutes. and set aside
Next day boil again for 10 minutes. Repeat until on the fourth day and cook until syrup thickens and camias turns to brown color. Let it cool.
Put in a sterilized bottle.

i really miss eating this balimbing. I haven't seen it for years.. I remember the last time I ate this was when I was still a kid...
