I prepared Vegetable salad this morning my daughter start to be hard headed again. She 's already slim but she wants more. She does not like to eat rice and eat only little food. I am afraid, she seem like having Bulimia (I hope and pray not). Vegetable salad is her favorite so i took the opportunity to eat a bigger amount. Actually all of us here in the house like so much so i made it sure that i used fresh vegetables except the pineapple tidbits and pickle relish to have a better taste.
I used half kilo fresh carrots. I grated by myself and my daughter requested to use the finest grater so it is not hard to chew and more tasty.
One 1 kilo of potato, washed and boiled then remove skin and cut into small cubes
One fourth Baguio beans cut into small pieces and blanch
2 grated onions
1 teaspoon pepper
1 teaspoon salt
4 tablespoon pickle relish( drained)
one small can of pineapple tidbits (drained)
One small bottle of mayonaise and mix together
one chicken breast boiled until tender and cut into small pieces
Mix all the ingredients in one bowl (big enough for mixing them together) and let it cool in the refrigerator before serving.
