Arroz Caldo (Tripes Rice Soup)

Ingredients:
beef's tripe !/2 kilo
!/2 ' ginger root cut into stripes
2- tablespoon oil
3 gloves of garlic minced
1 medium onion
3-tablespoon fish sauce and little salt
dash of peeper
1/2 cup rice washed and drained
67 cups of water
green onions

1. Beef's tripe half kilo washed and place in saucepan. Add water to boil and simmer for two hours until tender
2. Drain tripe and cut into small pieces
3. Saute garlic until brown and add onion and ginger until onion wilted. Add the tripe, fish sauce, salt, ginger for three to five minutes then add the rice and keep stirring continously for one -two minutes. Add water water and bring to boil. Lower heat and cook for 30 minutes until when done
4. Serve hot and garnish with chopped green onion and dash of pepper to taste
